Für etwa vier Sandwiches, benötigen Sie:
- 6 große Eier hartgekocht
- 1 große Avocado
- 2 Mayonnaise
- 1 1/2 Teelöffel Tajín plus mehr zum Abschmecken
Anleitungen
- Zuerst sechs Eier hart kochen und schälen (oder die “Lunch Lady”-Methode anwenden). Hacken und in eine Schüssel geben.
- Eine große Avocado würfeln. Ich halbiere die Avocado gerne, drehe sie auf und schneide sie dann mit der Spitze meines Gemüsemessers in der Schale zuerst längs und dann quer ein. Mit einem Löffel das Fruchtfleisch über der Schüssel ausschöpfen und die Würfel trennen. Etwa 1/4 der Würfel in eine mittelgroße Schüssel geben und mit einer Gabel zerdrücken.
- Mayo und Tajín zu der pürierten Avocado geben und gut verrühren. Zu den Eiern geben und unterheben. Schmecken Sie die Würze ab, fügen Sie bei Bedarf mehr Tajín hinzu oder warten Sie und streuen Sie es beim Servieren über den Eiersalat.
- Wenn Sie möchten, können Sie noch eine gehackte Frühlingszwiebel oder eine rote Zwiebel hinzufügen oder den Koriander aus der Gemüseschublade aufbrauchen. Dieser Eiersalat schmeckt hervorragend mit Tortilla-Chips, in einem Salatblatt, in einer Tortilla oder zwischen zwei Brotscheiben serviert.
